Grandson and son of restaurant owner Jean-Luc Sauron has been an indispensable character at Le Castellas for over 10 years. The wine master proudly reigns his wine cellar which contains several hundreds of bottles, some hidden treasures still unknown: Château d’Or et de Gueule from Costières de Nîmes or a Languedoc wine Saint-Chinian from the Domaine Rimbert.
The region is distinguished among others by the quality of its vineyards. Jean Luc Sauron always knows which wine would be the best match to accompany your dish, exalting the pallet with the full-bodied flavours of a Condrieu, the thickness and richness of a Châteauneuf du Pape, the finesse of a Crozes Hermitage, or the light of a Costières de Nîmes.
