Head towards Uzes, in the South of France to find the Gardon canyon and the famous Pont du Gard built over 2000 years ago and belonging to the Unesco world heritage fund.  It is here that Chantal and Raymond Aparis created their destiny in buying three 17th century buildings in the village of Collias. The buildings were rehabilitated in 1989 to create the luxury hotel and restaurant of the Hotel Castellas .
