Wine-making process :
· Plot stripping

Plot :
- Grenache and syrah vines have grown on this plot of land for 30 to 50 years in a soil reddened by iron oxide.
Elevage :
- 60% of the wine is kept in French oak barrels for up to 18 months (élevé en fût de chêne)

The sommelier’s description and comments:
The smell, a hint of grilled spice mixed with aromas of violet and red berries.
The taste, a mix of garrigue (thyme and rosemary) and vanilla unite to give this vintage a it’s body and harmony.
Food and Wine pairing :
the strength and finesse of this wine, kept in oak barrels beautifully accompanies game or hare.
The winemaster’s opinion:
A wine to be bought and put away for 10 years at 14° in a cellar.
At present, decant the wine 6 hours before, and after 4 years 2 hours before.
